The school's founder, Captain Brian Muston, has been in the yachting industry for 30 years, and the academy's staff of four have a combined total of 73 years of experience working on large yachts. Savvy Maritime Academy's 10-day Interior Crew Training Course goes well beyond the basics that are covered in most entry-level courses. The packed curriculum covers the Roles and Duties of a Yacht Steward/ess; Guest Service (including Table Setting, Napkin Folding, and Silver Service); Wines, Cocktail Making, and Bartending; Coffee and Tea, Cheese and Caviar, and Cigar Service; Flower Arranging; Food Safety; Housekeeping, Cleaning & Laundry; Nautical Terminology; and Getting Hired. But that's not all! AYI further holds custom and private classes aboard yachts and at estates. AYI has a few popular programs. There’s a five-day Super Yacht Crew Course, a three-day Silver Service Course, and a two-day class, aptly named the Two-Day Stew. The latter is particularly ideal for newcomers to the industry, to see if you’re truly up to making it your career. As owner Kristen Cavallini-Soothill puts it, “If they find out they don’t like living and working aboard, they haven’t spent a small fortune on days and days of schooling…and they can still use their skills elsewhere.” The Two-Day Stew Course covers one day of Silver Service (Russian, French, and Plate) and one day of Interior (Fine Detailing, Valet, Laundry & Guest Services).
